Simple Spinach and White Beans

Grab some spinach and check your pantry. You may already have a can or two of Great Northern or cannellini beans in your pantry for making this. Served as a side or as a main, this recipe only takes a few minutes. This vegetarian-friendly dish should be in your kitchen’s rotation!

Spinach and White Beans Recipe

Ingredients:

  • 2 teaspoons olive oil
  • 1 shallot, chopped
  • 2 garlic cloves, sliced
  • 1 Roma tomato, diced
  • 1 teaspoon tomato paste
  • 1 can Great Northern beans or canellini beans
  • 1/4 teaspoon dried thymes, oregano or basil
  • 1/2 cup chicken or vegetable broth
  • 12 oz. baby spinach or regular spinach
  • Sea salt
  • Black Pepper

Method:

  1. Drain and rinse the beans. Wash the spinach if using non-prewashed spinach.
  2. In a medium pan or heavy bottom pot, heat up the olive oil and sauté the shallot and garlic on medium-high heat for a minute. Lightly season with salt and pepper.
  3. Add the diced tomato and sauté until they soften, about 1 minute. Add the tomato paste, combine, and cook for 30 seconds so the tomato paste can carmelize a bit.
  4. Add the beans and mix. Add thyme and broth. Bring the pot to a boil and simmer at medium-low heat for 1 to 2 minutes.
  5. Turn the heat up to medium-high. Add the spinach in stages. Keep turning the leaves until they wilt. Adjust seasoning as needed. Turn the heat off, and the residual heat will continue to cook the spinach.
