- 1 clove chopped garlic
- A 3-inch section of lemongrass, finely minced or 1.5 teaspoon prepared lemongrass
- 2 teaspoons rice vinegar
- 1 teaspoon Mirini, or 1/2 teaspoon sugar
- 1 teaspoon lime juice
- 1/8 to 1/4 teaspoon sea salt
- 1/4 teaspoon soy sauce
- A dash of fish sauce, optional if you don’t eat fish sauce
- 1 teaspoon oil
Method:
- Cut the chicken thighs into 1-inch strips. Marinate the chicken with all the ingredients for 20 to 30 minutes.
- 2Put the chicken pieces on skewers. If you use wooden skewers, soak them in water for 20 minutes before using them to prevent burns. Do this while the chicken is marinating.
- To cook the chicken, grill or oven bake them at 425 degrees for 15 minutes.
