- 2 servings of frozen udon noodles
- 2 tsp oil
- ½ medium onions sliced
- 4 ½ cups water
- ½ cup Hontsuyu soup base or to taste
- 1 tsp brown sugar or 2 tsp Mirin (sweet cooking rice wine)
- 1 tsp soy sauce
- 8 oz thinly sliced beef
- Sliced green onions and red chili peppers for garnish
Cook the udon noodles according to the package’s instructions.
Heat the oil in a large pan or pot and sauté the onions for a few minutes until translucent. Add water, soup base, brown sugar, and soy sauce. Bring to a boil. Add sliced beef and bubble until the meat is almost cooked through. Taste and adjust seasoning to taste.
Divide the udon noodles between two large bowls. Pour the broth and beef over the noodles. Garnish with green onions and red chili peppers.
