Ingredients

  • 2 servings of frozen udon noodles
  • 2 tsp oil
  • ½ medium onions sliced
  • 4 ½ cups water
  • ½ cup Hontsuyu soup base or to taste
  • 1 tsp brown sugar or 2 tsp Mirin (sweet cooking rice wine)
  • 1 tsp soy sauce
  • 8 oz thinly sliced beef
  • Sliced green onions and red chili peppers for garnish

Instructions

  • Cook the udon noodles according to the package’s instructions.
  • Heat the oil in a large pan or pot and sauté the onions for a few minutes until translucent. Add water, soup base, brown sugar, and soy sauce. Bring to a boil. Add sliced beef and bubble until the meat is almost cooked through. Taste and adjust seasoning to taste.
  • Divide the udon noodles between two large bowls. Pour the broth and beef over the noodles. Garnish with green onions and red chili peppers.
