Small-Batch One-Pot Pasta — Easy Cauliflower Recipe for Two

A pot of macaroni pasta in a saucepan.

If you’re into easy one-pot pasta recipes, you’ve got to try this mini pot pasta with cauliflower! I call it a mini pot pasta because you can make it in a saucepan as small as 1.5 quarts. The portion is just right as a side dish or a cozy main for two. The cauliflower adds a fresh, light flavor that makes this pasta absolutely irresistible. I actually love making it as a late-night snack — and the next morning, I turn the leftovers into brunch by topping the pasta with a fried egg. I know, I just glossed over snacking on pasta… am I the only one who does that?

Here’s how to make this comforting pasta in just 20 minutes.
