If you’re into easy one-pot pasta recipes, you’ve got to try this mini pot pasta with cauliflower! I call it a mini pot pasta because you can make it in a saucepan as small as 1.5 quarts. The portion is just right as a side dish or a cozy main for two. The cauliflower adds a fresh, light flavor that makes this pasta absolutely irresistible. I actually love making it as a late-night snack — and the next morning, I turn the leftovers into brunch by topping the pasta with a fried egg. I know, I just glossed over snacking on pasta… am I the only one who does that?

One-Pot Cauliflower Pasta Recipe
One-Pot Cauliflower Pasta
Ingredients
- 1 cup macaroni
- 2 cups roughly chopped cauliflower
- ⅓ cup chopped onions
- 1 to 2 cloves garlic sliced
- 1 Roma tomato chopped
- 1 tbsp chopped parsley
- 1 red chili sliced, optional
- 1 tsp tomato paste
- 2 cups water
- ¼ tsp sea salt or to taste
- A sprinkle of dried oregano and/ or dried basil
- Black pepper to taste
- ⅓ cup shredded mozzarella or gruyere or both
- Grated Parmesan cheese to taste
- Dried or fresh red chili pepper to taste
- EVOO for drizzle
Instructions
- In a small saucepan, layer in the macaroni, cauliflower, onions, garlic, tomatoes, parsley, tomato paste, and dried herbs. Add water, sea salt and black pepper.
- Cover and bring to a boil. Once the pot comes to a boil, adjust the heat to a low simmer and cook for 20 minutes, or until al dente.
- Remove from the heat. Add the mozzarella and/or gruyere cheese and combine well.
- Adjust the seasoning to taste and finish with red chili peppers and Parmesan cheese.
- Drizzle some EVOO for an extra punch.
