If you want to know how to make some juicy boneless pork chops, you have come to the right place! I want to share with you my recipe for making super juicy pan-grilled pork chops. I will be using an enameled cast iron grill pan, which can be transferred to the oven for finishing the cooking. But before we dive into that, I want to talk to you about the brine. Yes, the brine! I always brine my pork chops before cooking them even if it means I only had time to put them in a brine for 30 minutes – It still makes a difference in my opinion. I have tried many brine recipes out there and just couldn’t get to a result I desired. After some trials and errors, I have come up with the perfect salt to water ratio for the brine. The pork chops would always come out flavorful but still left room for additional seasoning if the recipe calls for it. No one wants to be stuck with an over-salted piece of meat, right? Boneless Pork Chops Recipe
Ingredients:
- 2 thick-cut boneless pork loin chops, about 0.5 lb. each
- 1 tablespoon olive oil
For the brine:
- 6 cups water, 1 cup warm and 5 cups cold
- 1 tablespoon sea salt
- 2 crushed garlic cloves
- 1 teaspoon dried rosemary or 2 teaspoons fresh chopped rosemary
- 1 bay leave, optional
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
Method:
Here is how to brine the pork chops:
- Put all the dry brine ingredients in a large bowl. Pour one cup of warm water into the bowl and stir until the salt and sugar are dissolved. Pour the rest of the water into the bowl.
- Put the pork chops in the brine and refrigerate for 4 to 8 hours. The meat and brine solution must be kept below 40°F/ 4.44°C.
Making the pork chops:
- Pat dry the pork chops and coat with olive oil before cooking.
- Pre-heat oven to 400 °F/ 204 °C.
- Heat an enameled cast iron grill pan on medium-high heat for 3 minutes. The pan needs to be very hot.
- Grill the pork chops for 4 minutes on each side at medium-high heat. Sear the edges for 30 to 45 seconds before transferring them to the oven.
- Transfer the grill pan to the oven for 4 minutes or until the internal temperature of the pork chops reach 145 °F/ 66.5 °C.
- Rest the meat for 3 minutes before serving.
